a great philippine chicken recipeIngredients
12 skinless, boneless chicken thighs or 6 skinless, boneless chicken breasts
2 cups of water
2 cups of vinegar
2 cups of soy sauce
1 soupspoon of crushed garlic (if you don't like spicey food reduce this)
1 tablespoon of pepper
3 to 4 bay leaves
Rice (my Japanesse exchange students would only eat the Nico Nico rice and they loved this recipe)
Directions
Put everything in a large soup pan that holds at least 8 cups of liquid. Cover and bring to a boil, stirring occasionally. Once it boils, reduce heat to medium, cover pot and cook for 42 to 45 minutes, stirring occasionally.
Serve with Rice and save the sauce to pour over rice if you want. The rice I use takes 20 minutes to cook, so once the chicken as cooked for 20 minutes, I start the rice and they are done at the same time.
Do NOT store the chicken either before or after it is cooked in the sauce. The soy sauce will dry out the chicken.

LEMON AND DILL WILD SALMON WITH CAESAR SALAD (print)
400-600 calorie meal, organic, salmon, salad dressing, caesar saladIngredients
Caesar salad dressing:
2 cloves of garlic
¾ C of olive oil
3 TBLspoons lemon juice
2 tsp. Worcestershire
4 cloves of garlic
½ - ¾ C of fresh parmesan cheese
salt & pepper to taste
2 free range eggs in luke warm water
This is a quick and easy homemade Caesar salad dressing that allows you to avoid the harmful preservatives, additives and over processed oils of commercial salad dressings. When choosing olive oil the best choice is organic extra virgin olive oil from the ‘first cold pressing’.
Crack the eggs into a small bowl and add warm water let sit in warm water until the water cools down. This kills any bacteria. Add all ingredients into the blender and blend for a delicious dressing to add to your fresh romaine lettuce!
Directions
Salmon:
Preheat oven to 350 F. Place salmon on tin foil or in ceramic cooking ware with lid. Slice lemons and sprinkle salmon with dried or fresh dill. Place sliced lemons along length of the filet and put in the oven for 25-30 minutes. Serve with an additional slice of lemon.
Note: If you like your salmon more on the rare side or less than fully cooked check it after 20 minutes to see if it’s the way you like it!
